Porcini Mushroom Pâté (Keto Friendly)

2 oz dried porcini, rehydrated

10 White button mushrooms, rough chopped

1 Portobello mushrooms, scrap off all gill and rough chopped

1 medium cluster of oyster mushroom (if available), rough chopped

½ medium onion, chopped

1 shallot, chopped

4 cloves of garlic (use more or less, depending on your taste)

¼ cup of raw pumpkin kernels

¼ Cup of salted butter

½ Cup of cream cheese or Vache qui Rit (Laughing Cow)

Large slices of porcini. fragrant, meaty and buttery.

This is our own version of the mushroom pate.  You will only need 1 sauté pan and a food processor.  You could technically make this in a blender, but you will need the stir stick attachment.  Pause frequently to prevent overheating the motor.    You can make this vegan version by using vegan butter and skipping the addition of cream cheese.    We find that vegan cream cheese is not needed here; just increase the pumpkin kernels to ¾ cup to compensate.

In a large sauté pan, melt butter and let it brown slightly before adding chopped onions, garlic, shallots.   Sauté until slightly caramelized.  About 8 minutes.  Set aside and let it cool.   Add in another tab of butter, melt butter and let it brown slightly before adding in all the chopped mushrooms.   Sauté until all juices run dry.  This can take a while.  About 15-20 minutes.   Let cool on the side.

While the mushroom mixture is cooling, roast ¼ cup of raw pumpkin kernels over medium low heat until the seeds turn a slightly darker green brown in color.

Put everything in the food processor, pulse to chop before proceeding to blending.   You will need to take frequent pauses to prevent overheating the motor.  To have an extremely smooth paste, you will need about 10 to 15 minutes of blending.

After nuts are blended, add in the cream cheese (or vache qui rit), quickly blend.   Add in the cooled mushrooms and onion mixture.   Pulse to combine.    Salt and pepper to taste.

Keep in the fridge, no double dipping, and always use a clean utensil when scooping out the pate.  This pate will keep nicely in the fridge for up to 5 days.
